This beet watermelon juice might be one of the prettiest things I’ve made in my kitchen. Just watermelon and beet create this ridiculously bright pink juice — no food coloring, no complicated ingredient list, just two simple ingredients.
It’s fresh, naturally sweet, earthy without being overpowering, and definitely one I’d make again.
What You’ll Need
- Fresh watermelon, rind removed and cut into pieces
- 1 fresh beet, washed, peeled and cut into pieces
You can adjust the amounts depending on how much juice you want. I like using plenty of watermelon so the beet doesn’t overpower the flavor.
Into the Juicer
- Cut the watermelon into pieces that will fit through your juicer.
- Wash and peel the beet and cut it into smaller pieces.
- Run the watermelon and beet through your juicer, alternating between the two.
- Strain the juice and then give it a good stir.
- Pour over ice or chill before serving.
That’s it — two ingredients and that color is completely natural.
Beet Watermelon Juice Tips
Go easy on the beet. Beet has a strong earthy flavor, so you don’t need much to get that gorgeous pink-red color.
Make it colder. This beet watermelon juice is best served really cold. Chill your watermelon beforehand or pour the finished juice over ice.
No juicer? You can blend the watermelon and beet with a little water and strain it through a fine-mesh strainer or nut-milk bag. The texture and yield will be a little different, but it works.
Storage: Fresh juice is best enjoyed right away. If you have leftovers, refrigerate them in a tightly sealed container and give the juice a good shake or stir before drinking.
Would I Make It Again?
Absolutely. This is exactly the kind of recipe that made me want to start making more things myself. It’s simple, tastes fresh, and somehow two everyday ingredients turn into something that looks almost too pretty to drink.
Almost.
