If your cookies keep coming out flat, greasy, or weirdly cakey, it’s almost never the recipe’s fault — it’s usually one of these five things. I made every one of these mistakes before I figured out what actually mattered.
1. Your butter is too warm.
Soft butter should still hold its shape when you press a finger into it — if it’s shiny or greasy-looking, it’s too warm and your cookies will spread thin. Pull it out of the fridge and let it sit 20-30 minutes, not longer.
2. You’re not chilling the dough.
This is the single biggest fix. Chilling dough for at least 30 minutes (ideally a few hours) lets the fat firm back up, which stops your cookies from turning into flat puddles in the oven.
3. Your baking sheet is still hot from the last batch.
Dropping raw dough onto a hot pan means it starts spreading before it even hits the oven. Let pans cool completely between batches, or use two pans and swap.
4. You’re overmixing after adding the flour.
Mix just until the flour disappears. Overmixing develops gluten, which makes cookies tough and cakey instead of soft and chewy.
5. You’re guessing on oven temperature.
Most home ovens run hotter or cooler than their display says. A cheap oven thermometer will tell you the truth, and it changes everything.
Fix these one at a time and you’ll notice the difference immediately — no new recipe required.
My Go-To Chocolate Chip Cookies
Ingredients:
- 3 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp salt
- 1 cup (2 sticks) butter, softened (not melted)
- 3/4 cup granulated sugar
- 3/4 cup brown sugar, packed
- 1 Tablespoon of molasses (optional)
- 2 large eggs
- 2 tsp vanilla extract
- 2 cups chocolate chips
Steps:
- Whisk together the flour, baking soda, and salt in a bowl. Set aside.
- Cream the butter with both sugars until light and fluffy, about 2-3 minutes.
- Beat in the eggs one at a time, then the vanilla.
- Mix in the dry ingredients just until combined — don’t overmix.
- Fold in the chocolate chips.
- Chill the dough for at least 30 minutes (see why above — this is the step people skip).
- Scoop onto a cool baking sheet, spaced 2 inches apart.
- Bake at 375°F for 7-11 minutes, until edges are golden but centers still look slightly underdone. DO NOT OVERCOOK
- Let cool on the pan for 5 minutes before transferring — they’ll finish setting up.
